Don't let your breakfast get boring, try out another twist on the typical pancakes!
INGREDIENTS
1 cup yellow cornmeal
2 tbsp sugar
½ tsp salt
2 cups boiling water
1 1/3 cup milk or buttermilk
2 eggs
1 tbsp vanilla extract
2 cups flour
2 tsp baking powder
2 tbsp oilMETHOD
1. Mix cornmeal, sugar, salt and water and let sit for 10mins.
2. Mix in milk, let it sit for 5mins.
3. Add eggs, vanilla, mix well.
4. Mix flour and baking powder, add to the batter.
5. Fry on medium heat.
